Morita’s Chef Sake Brewer Hamajima has won the Gold Prize in the Annual Japan Sake Awards for eight consecutive years. He brews a range of sake featuring wonderful umami, good kire (which means there is no unpleasant aftertaste), good haba (breadth), and a harmony of the six flavors-sweetness, sourness, saltiness, bitterness, astringency, and umami. In this way, Morita’s tradition of brewing sake from almost 350 years ago still lives on.
