Just like soy sauce, miso has long been produced in locations throughout Japan, so there are various types that match with the preferences of a given area and are made via different raw material combinations and brewing methods. Morita’s main type of miso is mame miso, which contains only soybeans. It is created through traditional manufacturing techniques in which no temperature control is performed during fermentation and aging. Mame miso is made from soybeans only, so it has an ample amount of high-quality protein. It is known for its deep color, strong umami, and characteristic acidity.
